It’s not every distillery that names its stills, but Betsy and Bertha are part of the family at Spirit of Texas Distillery in Pflugerville.
Shaun Siems and Michael Rajski said they built the distillery from the ground up, even creating their own stills that they lovingly named.
They went into the spirits business aiming to create whiskey, but years of barrel aging meant they wouldn’t be able to get the business up and running quickly.
So, they decided to try distilling rum, adding pecans to the process for a true Texas flare.
